An authentic bartender with 8 years of professional career experience. Having crafted innumerable cocktails and perfected his techniques and palate at the bar counter, Daihiro shifted his bartending expertise to a unique "obanzai" (traditional Japanese home cooking) concept. He meticulously calculates the delicate umami of dashi and seasonal ingredients, while proposing whiskey selections and original cocktails — developing innovative pairing formats that cross over Japanese cuisine and Western spirits.
